Cabbage Pancake

Ingredients (for 2 pancakes):

  • 4 tbsp grated cabbage
  • 2 tbsp wheat flour
  • 1 tbsp chickpea flour
  • 1 egg or 4 tbsp yoghurt
  • 1 tsp sesame seeds
  • 1/2 tsp cumin seeds
  • Water (as needed, to adjust batter consistency)
  • Salt (to taste)
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder or ground black pepper
  • A pinch of asafoetida
  • Groundnut oil (for cooking)

Process:

  • Mix the above ingredients in a bowl until well combined.
  • Heat a pan on medium flame and add a small amount of groundnut oil when hot.
  • Pour the batter onto the pan and spread it evenly to form a pancake.
  • Lower the flame and cook for about 2 minutes.
  • Flip the pancake and cook the other side until golden brown spots appear.
  • Repeat flipping 2 more times, ensuring both sides are evenly cooked.
  • Serve hot and enjoy your cabbage pancakes with ketchup or chutney.
