Oats porridge
Ingredients for 2 small bowls of porridge:-
- A handful of rolled oats
- 1 glass of water to soak the oats
- 1/2 liter water for cooking (If you like an extra creamy texture, you can also cook the oats with a half cup of boiled milk in addition to the water.)
- 7-8 roasted cashews
- 5 roasted, sliced almonds
- A few pumpkin seeds
- 1/4tps cardamom powder
- 1/4tps nutmeg powder
- 1tbsp jaggery powder/dark brown sugar/honey
- 1-2 bananas or pieces of a mango
Process:-
- Soak the rolled oats in a glass of water overnight or at least for an hour. Discard the water before cooking. Soaking the oats in the water helps to release the phytic acid and hence makes digestion smoother.
- Heat half a liter of water and add soaked oats into the hot water. Let the mixture boil for 7-8 minutes or until you get the consistency you like. I prefer Kheer-like consistency. Give it a good stir in between.
- Once the oats are cooked, add jaggery powder/dark brown sugar, cardamom powder, nutmeg powder, roasted cashews, pumpkin seeds, and almonds.
- Cut the bananas/mango into small pieces and add them to the porridge once it is ready to serve.
- If you want to add honey instead of sugar/jaggery powder, please add it once the porridge cools down. If honey is mixed in hot milk or water, it becomes warm and turns toxic.
