Soft Chikki
Sesame Peanut Vadi/Soft Chikki
Ingredients:
- Sesame seeds: 1 cup
- Grated Jaggery: 1 cup
- Roasted peanut powder: 1 cup
- Ghee: 2 tablespoons
- Cardamom powder: 1/2 tablespoon
Process:
- Roast the sesame seeds on a low flame for 2/3 minutes, until they change their color to golden, and keep them aside.
- Roast peanuts until they pop up, and crush them.
- Heat the pan, put jaggery, and keep stirring.
- Once jaggery starts melting, add sesame, peanuts, and cardamom powder and mix them well.
- Apply Ghee to the steel plate/tray.
- Turn off the flame and take out the mixture in the steel plate/tray.
- With the help of a roller/ another small steel plate, press and flatten the mixture in the plate and keep 1/2 inch height of the Vadis.
- Let the mixture cool down for 2/3 minutes then cut it into small square shapes.
- If you let the jaggery boil for some more time, the mixture will become hard, it is called Chikki. If the mixture is soft, it is easy to cut cubes, and it’s called Vadi.
- These Vadis/Chikkis will last for 15-20 days.
