Gajar Halwa in a Pressure Cooker

Ingredients:

  • 800g-1kg carrots (grated)
  • 100 ml fresh cream
  • 100g Mawa or ricotta cheese
  • 150g sugar (adjust to taste)
  • 2 tbsp sultanas
  • 4 tbsp cashews (roughly chopped)
  • 1/2 tsp nutmeg (crushed)
  • 6-7 cardamom pods (crushed or powdered)
  • 1 tbsp ghee (clarified butter)

Process:

  1. Preparation:
    • Grate the carrots.
    • Crush the cardamom pods and nutmeg or powder them finely.
  2. Pressure Cooking:
    • Add all the ingredients (grated carrots, single cream, ricotta cheese, sugar, sultanas, cashews, and ghee) to the pressure cooker.
    • Mix everything thoroughly on a low flame for 2 minutes.
  3. Cooking:
    • Cover the lid of the pressure cooker and cook on a low flame for 5 minutes.
    • Increase the flame to high and wait for 2-3 whistles.
  4. Finishing Up:
    • Turn off the heat and let the pressure release naturally (about 10-15 minutes).
    • Open the lid, add nutmeg and cardamom powder.
    • Give the halwa a final stir, and adjust sweetness if needed.
  5. Serve:
    • Serve warm as a dessert.
