Gajar Halwa in a Pressure Cooker
Ingredients:
- 800g-1kg carrots (grated)
- 100 ml fresh cream
- 100g Mawa or ricotta cheese
- 150g sugar (adjust to taste)
- 2 tbsp sultanas
- 4 tbsp cashews (roughly chopped)
- 1/2 tsp nutmeg (crushed)
- 6-7 cardamom pods (crushed or powdered)
- 1 tbsp ghee (clarified butter)
Process:
- Preparation:
- Grate the carrots.
- Crush the cardamom pods and nutmeg or powder them finely.
- Pressure Cooking:
- Add all the ingredients (grated carrots, single cream, ricotta cheese, sugar, sultanas, cashews, and ghee) to the pressure cooker.
- Mix everything thoroughly on a low flame for 2 minutes.
- Cooking:
- Cover the lid of the pressure cooker and cook on a low flame for 5 minutes.
- Increase the flame to high and wait for 2-3 whistles.
- Finishing Up:
- Turn off the heat and let the pressure release naturally (about 10-15 minutes).
- Open the lid, add nutmeg and cardamom powder.
- Give the halwa a final stir, and adjust sweetness if needed.
