Chutney

Here’s a simple and flavourful recipe for a green chutney, perfect for breakfast sandwiches, snacks, or as a side dish! The chutney should be smooth and easily spreadable on bread.

Ingredients:

  • 4 tbsp fresh coconut chunks (from Sainsbury’s or Waitrose or Morrisons)
  • (or Preservative-free desiccated coconut as an alternative, from Sainsbury’s)
  • handful of fresh coriander leaves
  • handful of fresh mint leaves or thyme or dill or parsley, etc.
  • ½ tsp cumin seeds
  • 1 garlic clove
  • ½ inch piece of ginger
  • 1 green chili or black pepper powder
  • 3-4 cherry tomatoes (seeds removed)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • A pinch of black salt
  • 1 tbsp roasted peanuts and sesame seeds (optional)

Process:

  1. Prepare the Ingredients: Add the fresh coconut pieces, coriander leaves, mint leaves (or your choice of herbs), cumin seeds, garlic, ginger, green chili, cherry tomatoes, and black salt into a grinder or blender.
  2. Grind: Blend the ingredients to make a smooth, fine chutney. If needed, add a little water or extra tomato to achieve a spreadable consistency, especially if you want to use it for sandwiches.
  3. Serve: Chutney pairs wonderfully with finger sandwiches and goes well with slices of avocado, cucumber, cheese, boiled potatoes, or eggs.
  4. Store: Chutney made with desiccated coconut can be stored in an airtight container in the refrigerator for up to one day. However, it is best to consume chutney made with fresh coconut chunks immediately, as fresh coconut has a shorter shelf life.
